Can someone tell me what the best practice would be for optimal and equal utilization of traffic across two ports from each VMware host to two ports to NFS shared storage? Each device has one port on one switch, another port on a second switch. They are MLAG configuration. In the manual there’s mentions of different platforms (fm6000, trident, etc..) but the 7280 is not explicitly mentioned, nor do I know if these have to be configured identically across both switches.

When using the switches in MLAG, we typically expect to have the redundant connections to be configured in a port-channel part of an MLAG interface (port-channel with members in different physical chassis) preferably using LACP to form the ling aggregation. Of course, the ideal configuration may vary according to the deployment (including the server port configuration). I would suggest you yo get in touch with your Arista SE in order to discuss more details regarding the available options according to your environment.
