Do Arista switches, mainly the 7060SX2 model, support the querying of total switch bandwidth utilization through SNMP?

You can use the standard MIBs and do the calculations on your SNMP server using the following MIBs and the delta

.1.3.6.1.2.1.2.2.1.10 --> IF-MIB::ifInOctets

.1.3.6.1.2.1.2.2.1.16 --> IF-MIB::ifOutOctets

.1.3.6.1.2.1.2.2.1.5  --> IF-MIB::ifSpeed

Afaik, on zabbix and other NMS tools should be similar.
